Ana in Wonderland

Hope your weekend is off to a great start! I began mine with a nice 20 minute yoga session :) Being a beginner, I found some of the poses a bit difficult. I have gotten various suggestions to get a yoga block. 'These blocks are of great purpose as some of the poses which many may find it hard to do can be modified as it will get the floor closer to you." I found this youtube video :

How to Use a Yoga Block for Better Form and Flexibility:

I will definitely be getting a yoga block soon!

After my yoga session I had a yummy bowl of oatmeal:

  • 1/2 cup of oats
  • water
  • PB
  • Apple
  • Vanilla Yogurt
  • Loads of Cinnamon ;-)
Last night my attempts to watch "Alice in Wonderland" failed :( By the time we got to the movie theater all of the tickets were sold out for the showing we were hoping to catch. We thought about seeing, Dear John, but for some reason the movie had been removed from showing! By then we were so bummed we just decided to rent a movie and head home, but no worries I will watch "Alice in Wonderland" by the end of this weekend ;)

The night turned out great though, I came home to these awesome banana and PB sammy's and watched I Love You, Man! It is such a funny movie, my parents loved the movie and the sammy's.

Just some time in the freezer and they are ready to eat!!! Such a great treat!

I am off to do some grocery shopping (my favorite forms of shopping) for a yummy recipe I am making. Hope you are having a great Saturday!!!

Bananazzz

Hey guys, hope you are having a happy Monday :)

I just got back to O-town and I am already missing home :(  I always have so much fun at home!! I get to spend some quality time with the family, and take full advantage of their fully loaded pantry and kitchen ;) See for yourself!

Made this KICK-AsSalad for my parents!
 Doesn't it look pretty :)

Tuna salad : tuna, egg, tomato, celery and light mayo

Even got a chance to make these muffins!

This Bread is Bananazzz! b-a-n-a-n-a-s :)  I got the recipe from Denis Austin's Morning Stretch.

Banana Bread
Ingredients
  • 2 cups whole-grain pastry flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 large egg
  • 3 tablespoons canola oil
  • 1 cup mashed overripe bananas (about 2 medium)
  • 1/2 cup light vanilla yogurt
  • 1 teaspoon vanilla extract
  • Walnuts ( I decided to add these to give the bread some texture!)

Preparation
  1. Preheat the oven to 350°F. Line an 8-inch by 4-inch loaf pan with foil, letting the ends hang over. Coat the foil with cooking spray.
  2. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a medium bowl, whisk together the sugar, egg, and oil until well blended. Whisk in the bananas, yogurt, walnuts, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just blended. Scrape into the prepared pan. (I wanted muffins, so, I added to mixture to the muffin pan)
  5. Bake for 45 to 50 minutes, or until the loaf has shrunk from the sides of the pan and a wooden pick inserted into the center of the loaf comes out clean. Transfer the pan to a wire rack and let cool for 30 minutes.
