Hummus & Salsa... Yes Please!

Good Afternoon!!! T.G.I.F!!!!

Ladies thanks for all the comments on yesterday's post! As food bloggies there were many things in the article that we could all relate to. It is no surprise to note that foodies have a passion for food and enjoy sharing their eats, but of course if taking pictures of what we eat becomes an obsession then there lies a problem.

Many of you agreed with the statement, "tell me what you eat and I'll tell you what you are". I too believe that one can learn a lot about a person solely from their diet. I feel that characteristics such as discipline, self-control, and dedication shine through the food we consume. For me, it has not always been easy keeping a healthy diet... specially in college!  There are times I get the urge to drink soda, stuff my face w/ white chocolate covered pretzels, or do a midnight run to taco bell!  And it really does take dedication and self control to be able to avoid eating some of the stuff you once loved, even-though, you know in the long run it is bad for you. But of course, treating yourself once in a while is completely acceptable ;)

Now let's move on to food!!

Today my hopes of laying out by the pool were shot down by the rain, booo!! Guess I still have the weekend to lay out :)

Morning began with a cereal-kick!

I am lovin' strawberries!!

1 cup of Kashi Cereal, 1/2 cup of A.M., Strawberry, 1/2 Granny Smith

Uhhh Ohhh! Houston we have a problem.... I don't know if I can get sick of this cereal!! (guess thats not that bad of a problem)

After b-fast I worked on some school work, needed to get a couple things done before the weekend. This weekend Rusty's parents might be coming up to visit and we might be going to Disney!!! So, I got most of my school work done so I won't have much to worry about when I'm spending time with Mickey ;)

After yesterday's rest day today was right back to Jillian Michaels workouts, Ouch! In the Making the Cut program she gives you 3 days off from her circuit workouts but your are really supposed to just have 2 days off, so one day a week I get to do my own cardio workout!

Today is Day 4 of the workout and I am lovin' it... my body not so much, haha! The workouts are awesome, but it definitely pushes you to the extreme. Today there were a couple of moments I wanted to quit but I felt like Jillian was right there lookiing at me and yelling "INTENSITY, INTENSITY, INTENSITY!"

After the gym I was hangry and it was time for lunch! I was in a creative mood and I made this delicious creation that I urge you to try!!

3/4 cup of Egg Whites, Handful of Broccoli Slaw

Guess, my omelet making skills are not too shabby ;)

For the sauce I used this lovely combo:

1 tbsp of Hummus, 1tbsp of HOT salsa 

If you haven't tried this combo, dooooo it!! I promise it will not disappoint.

I can't believe it was my first time mixing hummus and salsa together...I had been missing out!

  3. I can't believe I've never thought of hummus and salsa, that sounds amazing!! Definitely trying that tomorrow! Nutritional yeast + hummus are awesome together, too.

    I never get sick of Kashi GoLean either...I've yet to find a cereal that tops its awesome nutritional stats!!

    I agree, it's so freaking hard to stay disciplined when it comes to eating healthy, and especially when you're in college. Even when I prep my lunch, I will make my way to buy ice cream because I am stressed. booooo. So I look up to my friends mom or Jamie Eason for inspiration.

  7. Oh I love combining hummus and salsa.. so good!! I have not done that in a long while though!

    I think a little treat once a day and 1 treat meal a week is perfectly okay. This is what I do or else I would not be such a happy camper.. plus balance is key!

  9. I always had SUCH a hard time eating healthy in college because I was surrounded by unhealthy takeout and snacks from friends, and even the dining hall served junk! I think you're doing a great job eating healthy!

    Pineapple and nut butter is a delicious combo. Have a great time with Mickey! :)
